Why so many different styles? I mean red cross on blue cantons (square and rectangular), Union Jack cantons with Ireland, Square Union Jack Canton without Ireland (two sizes) and Union Jack without Ireland covering the entire left style.

Like obviously not every flag needs to follow the same style but there being several styles followed by multiple states but also doing it differently is confusing. Great Britain Union Jack vs Great Britain and Ireland Union Jack is understandable as the states using the former gaining statehood while the former was the British flag but the ones using the other after it. Looking at your map thread post the red cross on blue is explained as the flag of Oldenburg but "British Honduras" having the Oldenburg canton? I guess because North America got it after Oldenburg family had become their rules. Also with the implication of ENA fighting the British going by the map thread post would ENA states using the Union Jack be like Confederate Flag in OTL Southern states?

Over the course of North American history the national flag changed something like 3 times. Different states made their flags at different times, and some changed their flags to reflect the new flag in the canton.
Its also less that they fought the British, but they occupied the British Caribbean islands during the war (where they were fighting on the same side), and after the war they just took over the administration of the colonies. Its more that they told the British politely, yet firmly to leave. Which they did.

Timeline
1801: First flag (triband) adopted.
1810: The Kingdom of New Granada in unilaterally declared to be in personal union with Spain. Flag changed to Spanish fess style. The country claims Grenada. The nation elected their own Viceroys-Elect, who acted as acting heads of state.
1811: Flag changed to rectangular style.
1812: Confederation formed between Venezuela (OTL Colombia) and The Caribbeans (OTL Venezuela & The Guianas).
1819: The Fundamental Law is enacted.
1822: The institution of monarchy is deactivated; start of the Monarchist Revolts. The country's head of state is titled Governor General.
1830: Venezuela and The Caribbeans became states, their heads are titled Caudillos or Heads of State.
1853: Abolition of slavery and suffrage to all males over 21.
1863: Name changed to The United States of Columbia, end of the Monarchist Revolts. End of the claim to Grenada.
