A minor thing but i can’t see Henry naming his daughter after Catherine of Valois, he purposefully tried to distance himself from her iirc (yes he and Elizabeth’s youngest daughter was named Catherine but that could also be for Catherine of York and Catherine Woodville, who was married to Henry’s uncle…I can’t see him picking it in this scenario)

Actually, OTL Katherine Tudor was named after their daughter-in-law if I remember correctly. She was born after the wedding of KOA and Arthur Tudor and Arthur's death after all.

Yes, but this daughter's mother isn't Elizabeth of York, so he's got no need to appease Yorkists with her. In this case he would likely want to honor her royal great-grandmother

The Bretons may not have been very Pro-French but why would they accept Tudorian Rule over them? I know Henry Tudor lived in Brittany, but that wouldn't be enough.

Anne’s first engagement had been to the future Edward V and a match between her and Henry VII had been proposed, so Brittany would accept a Tudor ruler without troubles, unless that kid was the heir also of England, but if Elizabeth died giving a male heir to Henry VII is likely who the match with Anne of Brittany would go ahead with little trouble
