Pork Roast with Bell Peppers
You will need-
1 kg bell peppers (2 pounds)
8 cloves garlic
60 mL olive oil (1/4 cup ish)
A pork roast (1.25 kg, or 2.5 pounds)
4 sprigs of thyme
60 mL balsamic vinegar (1/4 cup ish)
Anyways, then you stem and seed the peppers and cut them into thin slices. Crush the garlic, and leave the skin on- gay, I know, but Geneviève does it that way
In a large saucepan over medium high heat, heat the olive oil, and sauté the pork for 10 minutes…then add the bell peppers, garlic, and thyme. Season with salt and pepper…then cover, reduce the heat to medium, and let it cook for 45 minutes.
Then, mix in the vinegar and enjoy!
