Would Chiang Kai-shek accept a moderate peace with Japan

Would Chiang Kai-shek accept a moderate peace with Japan in the second Sino-Japanese war.

Say: Recognition of all pre-1937 territories, annexation of Shandong and Hainan, and economic concessions along with massive war reparations.

Would Chiang be able to survive this kind of peace post-war

Short answer: no. Somewhat longer answer: No, because Japan had already violated multiple previous treaties. There is literally absolutely no reason for Chaing to sign a new treaty with Japan. They're just going to break it in a year or so anyway.

Unless Chiang has no choice other than to accept this peace, I really can't see him doing so.

Manchuria was considered an integral part of China by this point. He's going to want the Japanese out of mainland China entirely. For the KMT, a moderate peace leaves Japan in control of the Korean Peninsula and Taiwan.
