Say that in late 1941 early 1942 due to something happening Stalin dies right in the middle of operation Barbarossa. So what happens. Can Russia still put the fight it did in otl, how differently would WWII go? What do you guys think will happen?

No. As far as Hitler was concerned, the Soviet Union was only fit for conquest and extermination, with or without Stalin.
What most likely happens is a joint-rule set up amongst the rest of the Politburo followed by a power struggle after the war. They are too well aware of the threat of the Germans to try and do it during the war and both the Red Army and NKVD are a bit busy with the Wherhmacht.
If the Soviets are willing to give up everything West of the Astrakhan-Arhangelsk line, then the Germans may very well accept. The Germans were not interested in Siberia.
The question is what terms the Soviets would offer to tge Germans.

It is much more likely that a well-positioned successor--perhaps Molotov--or joint group of successors lead the Soviet Union and continue the war.
