But did the French not have an option to reclaim New France, in return for handing over some Carribean island? I seem to recall that from school with the French government deciding that the island was more profitible.

No. You are thinking of 1763, after the Seven Years War, not 1783. In that case, the British had the option of choosing (or rather had a debate on which of these they should demand to keep) either New France or Guadeloupe. They chose New France.

No they did ask the French which one they wanted to have back and they choose Gaudeloupe which was of course bad for France in the long run.
 
Hard to have a much weaker attack as there were less than 10,000 troops at the Battle of the Plains of Abraham.

If the French were still holding Quebec in 1762, they probably would not have given Louisiana to Spain to keep it out of British Hands.

I doubt a Colonial Attack on Quebec, as the Colonials were not able to raise the requested 4,000 men for the planned attack on New Orleans in 1763.
