WI Saladin dies

What if during the siege of Acre, Saladin is killed in battle and Richard the Lionheart goes on to take Jerusalem. How would this change things? Would Outremer last longer or is it still doomed

Yes, it's still doomed. Saladin dying at Acre just gives the Crusaders a bit more time before the next great Islamic conquerer to be sets his sights on Jerusalem and I imagine that would be a lot sooner than many would expect. Once Saladin perishes, it would not be long until the Mamelukes make a play for rule over Egypt.
 
Jerusalem was indefensible without Oultrejordain, without holding that with colonists then the KoJ is doomed in the shorter term.
