Suppose Seljuk himself is killed, the Seljuks don't migrate into Persia, or are somehow defeated and prevented from establishing their large empire, what would be the result of this?

There may be other Turkic tribes that would enter the Middle East and Anatolia, but Seljuq should kick the bucket during his time as a soldier in the Khazar army if you want a Turkic migration that doesn't have him at the helm.

Plenty of other Turkic tribes. Including the one which OTL got lead by his descendants all the way to Nicaea - just because he and his family are knocked out doesn't mean the riders are.

But if we go the "stopped", stopped where?

I am aware that this won't stop the Turkic migrations.

By stopped, I mean by eastern Persia/Central Asia, never making it to the Iranian Plateau proper.

Hm. That might be difficult. Though a convenient civil war over the leadership of the Seljuks might work - instead of having what appears to cooperation among the family early on, have them be at each other's throats.
