I was talking with some friends about state religions and this scenario came up, I do not think it is very likely but it is certainly interesting.
So we all know that in Mexico today (as well as many other Latin American countries as well as the Philippines) the cult & worship of the Virgin of Guadalupe is an essential part of people's Christian / Catholic lives. Sometimes (if not practically always) the Virgin is even given more importance than Jesus and is definitely more present in people's prayers than any saint and possibly even God.
So WI: at some point before or after the independence of New Spain (although clearly this act would be very much like declaring independence) the church in New Spain/ Mexico breaks away from the Roman Catholic to create La Iglesia Catolica Apostolica Guadalupana? (or Guadalupan Catholic Church).
Would the new faith be able spread across Latin America?
