WI:If Southern Italy remains Byzantine

What if Southern Italy remains Byzantine, what would be the langauge spoken in Southern Italy, would it be Romance or Greek?

Probably Greek,but that would be the least of their worries,since that would curtail the rolle of Spain in the peninsula and would add one more powerful player in the power game;as a result it would also depend on the behaviour of the parties involved.Certainly the 30 Years War would
turn them to a great extend against the pope and the latin language as a
result...
