Need to consider the origins of the Mexican-American war of 1848. Its not clear if a independant Texas is key to that event, or if it happens anyway.
 
Mexico was on the decline, and would continue to be on the decline.
USA was on the rise, and would continue to be on the rise.

Texas isn't going to change that.

Discovery of gold in CA while Mexican territory is going to be a double edged sword. It'll make Mexico want to develop the area and hang on to it, but Mexico still will be a weak chaotic former colony with limited means to control events in CA.
