I think USS New Jersey would still get re-activated for Vietnam simply because USS Kentucky wouldn't have the guns. If I remember right the plan was to remove all the rear gun turrets and replace them with SAM launchers and magazines. Now the 1980's re-activations showed that heavy guns and electronics do not mix well, overpressure issues when firing the main battery if I remember, so the forward battery would probably be removed too. Replaced by even more SAMs I figure, heck USS Kentucky might just get 4 SLBMs (sea launched ballistic missiles instead of sub launch). If she were upgraded with AEGIS/Standard SAMs in the 1980s those SLBM tubes would be great for VL UAVs, or Prompt Global Strike in the 2000s.
