There are too many options!:p

We could help you better if you have a better idea of what you want, maybe reducing it to no more than five options.
Anyway, I think that if you want to keep you focus on Ethiopia you shouldn't write the first one. No Islam TLs have so greater effects around the world that you quickly would lose the focus from Ethiopian affairs to other places. Also, a TL where Ethiopia is completely conquered by other power would probably have a similar effect too. Personally I would go with Menelik's March to the Sea.

The one where Ethiopia manages to pull off a victory over Italy might be fun, but I'm pretty sure it is ASB. Nonetheless, I'd read it.
Less of a victory than "Hold-the-Italians-off-until-we-can-find-an-ally-or-at-least-weaken-them-greatly". I'd guess the British would come- unless WWII is butterflied away, then it becomes "Major insurgency in Italian East Africa"

An Ethiopian victory in the war with Italy might butterfly out of Ethiopia being a British protectorate, perhaps?
 
I guess, I'll have to keep on listening though. Which one is

-the most Wankish
-the one that leaves Ethiopia most reasonably well-off
-the most like OTL (i.e., the worst)

As the Death was unknown, It is easy to imagination It being a plot that goes the other way.

It was after the death of ‏Emperor Eskendar, that Ethiopia descended into a era of Warlords, that tore the Country apart for several hundred years.
This also allows the Portuguese to have more influence.
With Portuguese help the Somalian attack is less devastating, and a United Ethiopia can counter attack, taking Djibouti, Berbera and the North Shore of the Horn.
