What if Japan invades the Netherlands East Indies only (no Pearl Harbor)

The Japanese easily defeated a combined British/Dutch/Aussie/American force in the NEI in 1942. The USA made a major contribution in ships and planes and without the USA it would have been quite a bit easier for Japan to roll over the British Dutch and Aussies.
But in the end it would have to face the Americans i would guess in some way ore form.

That's the question. Would the US go to war over European colonies in Asia? And if so would it be a war in which our objective was unconditional surrender?

Maybe it will go to war, but certaintly not for unconditional surrender.

Though I think it depends a lot if Germany declares war on the US when the US goes to war with Japan or not.

If they do and the conference in which they agree on unconditional surrender still happens, then FDR might go "Well, I might as well go all out and demand this from Japan as well."

If the US fights only Japan, then they will likely fight until a negotiated settlement is reached.

Most likely in favor of the US, like Japan withdrawing from China and a few conquests. But I could see some scenarios in which the Japan wins, maybe if they capture large sums of US POWs and offer to exchange them for a free hand in China and removing the oil embargo.

If the British and/or Americans became aware of a Japanese plan to invade the DEI, wouldn't they simply invade the DEI themselves (perhaps like they occupied Iceland to prevent the Germans from getting there)?

The DEI is not Iceland, it has its own army and air force, it is not going to like being invaded by anybody, plus it will strain British-Netherlands relation a lot.

What if the Netherlands permitted an Anglo-American occupation of the DEI knowing the Japanese were coming? Or would this not be acceptable by them?

Same reason why the British did not do it in OTL i think, they never toughed Japan would launch a invasion of the DEI ore other places.
