That's because Caesar's "Gallic Wars" are the only real surviving contemporary source that document some of the actions that took place during them.
 
So I should just follow Caesar? And Caesar isn't the best for describing whole battles. He tends to focus on one legion, describe what happens to them for half the battle then moves on to the next legion on repeats. I find it difficult to follow

I don't see that you have much of a choice...
Perhaps seeking out a good commentary and analysis of the "de Bello Gallico" by a modern historian.
