The Catalan Company's state would be called the Kingdom of Anatolia, and Roger de Flor would be its first ruler.

Relations with the natives will be...complicated. Many Greeks were happy to be liberated from Turkish rule, but many will also start questioning whether the Catalans really are the lesser of two evils.

In terms of foreign enemies, they only have to deal with the Turkish states at first. The Byzantine Empire will be pissed off, and reluctant to recognize the new kingdom; but they'll also be anxious not to provoke the Catalans and eager to keep their attention focused on the Turks (until the empire can get back on its feet). As such, the Catalan state would be safe from attack by the Byzantines for 5-10 years at least.

At some point, Roger will probably recognize the overlordship of Charles of Valois, titular Latin Emperor of Constantinople, in exchange for getting his royal title confirmed.

The Duchy of Athens stays under the house of Brienne. The Frankish states in southern Greece stay under Angevin suzerainty and come out a bit stronger; but Byzantium also comes out significantly stronger, so this is counterbalanced. Epirus and Thessaly fall out of the Latin orbit and become vassals of the Byzantine Emperor. The other Latin states will survive for the time being.

Will the Catalan kingdom of Anatolia survive in the long term? Ehh...maybe, maybe not. Leaning towards "no". But they'll provide a nice buffer for Byzantium to recover a little of its strength.

Could it prevent the Ottomans from crossing the Hellespont, and establish the Stronghold at Gallipoli?

Butterflies mean that the Ottomans’ rise is significantly different if it still happens. All in all the Christians as a whole are stronger ITTL with less infighting, so mayyyybe the Ottomans don’t enter Europe? On the other hand, they’ll still want to fight each other, so it may just delay the Turks by a few decades.
