Visigothic Spain

King Roderic defeats the Moors and the kingdom is saved. Does this imply linguistic and cultural unity in later years? Would Portugal and Aragon still emerge? Or perhaps the Moorish conquest is largely confined to the extreme south and the Christians are able to retake it after only a few centuries.

Visigothic Spain at this point was beyond saving. The deep problems that plagued the Goths allowed the Muslims to drive all the way into Aquitane. You need a POD way, way back, like Justinian's Reconquesta probably.

Of what? The Iberian Peninsula? It already was then, why would it break?

Would Portugal and Aragon still emerge?

One was born as a duchy granted to a Burgundian crusader and the other a Navarrese mark between Muslim Saragossa and France. The only possible answer is no.

The battle was here, and the Muslim forces small:

If they are defeated as you suggest what's left is just the Muslim camp base at Gibraltar. The Visigoths would retake "Al Andalus" in only a few days at most. It's still possible to have future Muslim raids and expeditions but then the picture would be entirely different than in OTL.
