what is the best way for the vikings to create a large empire and reform their religion in the process

The only thing you have to add is to make him understanding all advantages of Christianity (whatever they are) and to spread the word down the chain of command. ;)

Pretty sure he did understand the advantages of Christianity, seeing as how Canute was a Christian.
 
IIUC in about 1000-1100 the Vikings, actual Vikings not distant descendants, had Scandinavia, Britain, Normandy, some bits of Russia, Sicily and the Principality of Antioch. Not an empire but extensive nonetheless.

Any body in Normandy and Brittany past Rollo might as well be "distant descendants" of Vikings, the Normans assimilated very quickly.
