How would a United States with these geographic boundaries have progressed into the 20th century? Even more powerful or dealing with more internal strife's?

They're kinda unrealistic; the Mexican diplomats that met with Trist were hard-pressed to sign over as much as they did and support for "All Mexico" was steadily growing in the United States. Indeed, it was perhaps the only issue that ever united Jefferson Davis and Northern Abolitionists.

Why didn’t that traitor Jeff Davis want all of Mexico? It would have resulted in more slave states

This belongs in pre-1900. It's the POD which determines where a post belongs. (Of course there are effects after 1900 but that is true of practically everything with a pre-1900 POD.)

He did want it, although from what I gather he didn't expect it to yield much in the way of Slave States either. Abolitionists were also starting to become in favor of it as well for the exact same reason.
