I highly doubt that there would be an enormous international reactionary "Anti-Crusade" from muslim nations if Mecca was taken, But not Ravaged. Oh believe me there would be some. But it would not be anything like today. Communication, Transportation and money issues would get in the way for lay-men. The lords would fear revolt if they moved their armies. It would be the same problem as the Europeans with the Crusades. If there isn't wholesale slaughter and they did the just the usual part of increased taxation for religion I really don't think it would be dire. people were alot more pragmatic back then. If they were allowed to live in survivable condition they are not as likely to put themselves in a position to die for a cause.
I can't really see any reason for any European to actually want to take Mecca though. Other then its religious significance it does not have any extreme value. Most likely it would be traded back for something else. But getting Jerusalem is a stretch. Unless you found an absolutely powerful ruler in the Levant to trade it for, who could power project his own forces to controll the Hidjaz. The only reason to take Mecca would be to ransom it back, and I don't know what they could really want that would warrant the blood it would cost to take it.
