Well a decisive enough victory could end the union between Poland and Lithuania, no?

That could be interesting. Including a much earlier Westward expansion for Moscow...if Lithuania stays separate from Poland, for example, and falters in its easern expansion as historically. And maybe even a rapproachement between the Knights and the Polish Crown as a response...though I doubt that Poland would give up designs on Chelm just like that even then.

Decisive Polish-Lithuanian victory might end the union, Teutonic victory would only make union stronger. In 1431 Poland and Lithuania fought war, because Grand Duchy became very strong, and Lithuanian nobility chosen Grand Duke against will of Poland, thus braking Union of Horodło. With danger from stronger Teutonic Order it wouldn`t happen.

Would the Order actually avoid the civil wars it historically endured following the defeat? It's an open question if the Order wins but isn't structurally stronger?

Well, yeah - I think that cities would rebel eventually anyway, perhaps a little bit later. If TO couldn`t reform itself to stop these rebellions while losing wars, it would stay unreformed even longer after more successful wars, IMO.
