Spanish Australia

One thing is certain though - the crime rate in modern Canada would be much higher ITTL if Britain has to send her convicts somewhere else.

Not really the crime rate in modern Australia is comparable or even lower than that of the United Kingdom.

I believe these gold deposits would be discovered fairly quickly, it only took like 15 years after the first settlement in Melbourne for these gold deposits to be discovered. If a settlement in OTL was established around 1805 (which is very possible*) then by about roughly 1815 these gold deposits would be discovered.

*In 1803 an unsuccessful British settlement was established in the region where OTL Melbourne is, however they chose a place in the region where the soils were poor. It took until 1835 a settlement was established in a region with one the best soils in Australia was established. The discovery of these gold deposits say in 1820 would make an interesting timeline in it's own right by it's self.

*The discovery of gold in OTL Central Victoria was in 1851, that triggered a gold rush comparable to that of California.
If its done by 1815 then we would probably be talking about immigration being mostly colonial driven, so I'd expect plenty of Mexicans, Peruvians, New Granadans, Filipinos to establish a spearhead, followed by Europeans. Would be a great place to get food.

You would also have a not inconsiderable population of Mestizos who are the result of Spanish men marrying Aboriginal women.

I know the idea is perhaps borderline ASB, however this is simply too interesting not to consider.

Australia could be kept but this would require Spain to not lose her colonies during the Revolutionary period, which basically means the Napoleonic wars need to be prevented and/or limited in scope so the chaotic years of the 1810s don't occur.
All of Spain's Colonies? Or would royalist Mexico and/or Peru suffice?

Both of those would be fine; La Plata was rather marginal in comparison to the big moneymakers of Peru and Mexico.
Perú was the viceroyalty that produced less in terms of anything by the late XVIII. Both New Granada and La Plata had a higher population and contributed more in terms of taxes and mineral extraction
