Make Che Guevara a Roman Catholic saint and a leading liberation theologist.

Bonus points if he gets martyred!

Che could relatively easily end up as a priest, changing up his early life a bit, and maybe having Guzman's government in Guatemala survive longer (making him less cynical and violent). Saint, on the other hand.... it would require major, probably ASB changes in the Catholic Church, which was highly anti-Communist. Now, if Che was appointed Archbishop of Guatemala City in 1960s democratic socialist Guatemala, and ended up being martyred by a military government like Archbishop Romero in El Salvador, he might have been beatified or even canonized by now.
 
Che would have been only 40 years old in 1968. I don't really know the usual practice, but that feels awfully young to be made archbishop. But that general plot line sounds about right.

Were his parents particularly religious? That would definitely play a role in the story.

It would, although even if his parents weren't religious, maybe they end up moving to a smaller town and he ends up in a Catholic school?
