The British empire, partly due to blind patriotism and partly because I love the disparate, diffuse nature of this empire. Far flung nations held together by the thin threads of a merchant's trade routes, vastly different people with equally diverse ways of doing things and living life. I hold romanticized views about empires of all kinds, but in a modern era, with equality being much closer to reality than ever before, perhaps this British empire could help it's constituent nations, rather than explooit them. Butthen again, so could any of these empires with a bit of work.

I ran through this list, and was about to select Britain, but then I realized that restoring the Yuan dynasty China would probably be better for humanity in general since it would be replacing two states with serious human rights issues with a generally decent (if absolute) monarchy, while providing an opportunity for the Muslim west and possibly Tibet to become independent.
 
I chose the Sikh empire, mostly because I've always been fascinated by the religion itself. It's also my understanding that they very nearly defeated the British on at least one occasion, which is badass as hell IMO.

Just to clarify, when I said Empire of China, I didn’t mean the Mongol Yuan Dynasty, I meant the Yuan Shikai’s Empire of China, the one he tried to form in 1915, but there was a civil war, and he abdicated and died in 1916

Probably even better, if the warlord period could be avoided with a bit of advance information, China’s left as either a monarchy or a republic.

What an odd--if not recurring--question.

Why would anyone want to restore any empires? Self-determination and democracy are pretty cool. Imperial subjugation, less so.
 
But, Britain is still kind of empire in form of Commonwealth.
I'm not an expert, but I think that the monarchy in Brazil will somewhat stabilize the country.

Today's European monarchies are mostly ceremonial. I have respect for constitutional monarchies, but some countries have proved more stable in the form of a republic. Germany is a good example.
Opposite example is Italy that has been an unstable republic for 72 years. Austria-Hungary is impossible in the form of the OTL empire, but is possible as an extended version of the Visegrad Group.

Chinese Empire would definitely be interesting to see.

There are only a couple here on the list that wouldn't look like genuinely evil totalitarian states(Assyria) or tinpot dictatorships (Empire of China.)

I would probably restore the Ottoman Empire. Take a war-torn, ethnically and politically unstable region and make it less so. The Ottoman Empire was liberalizing by the end of it and was honestly not as bad as places like Syria and Saudi Arabia and little worse than Egypt's dictatorship. Then again, the Armenian Genocide was very very bad, so maybe not.

The Empire of Brazil would be another one. It was overthrown because it was too liberal and abolishing slavery. That's pretty unique among empires.

...The Commonwealth High Commissioners approach the Queen and want her to head a restored Empire. Means India has HUGE influence, prevents wars, and really confused everyone else. Royal Viceroys appointed. Buck House guarded by Goorkhas and Maoris.

Fascinating observations by others on the scale of forces achievable by such an Empire and the economic, social and diplomatic effects. 'Lizzie spacewank, anybody?'
