How possible could it be to have a non-Islamic Sassanid rump state or a group of Sassanid-era people fleeing Persia to more "friendly" ground, like Georgia or the Crimea?

There was such a rump state in Transioxana, under Chinese protection. A chronicle even says that the Sassanids managed to occupy, for a short while in 662, Ctesiphon, with a Chinese Army.

Yep, under Pirooz II, the last Sassanian emperor. It was effectively a Chinese puppet state, but it had it's own court and everything. It was located somewhere between the Tarim basin and what is now Turkmenistan. It faded from history after the death of Narsieh, his son, and was presumably conquered by the Arabs after the Battle of Talas.
