Plausibility check: Ottomans never conquer any of Europe

Why would those Latin states disappear? I would think the Aragonese or Neapolitans would try to preserve them?

Their power isn't that great and the Latin barons themselves aren't that loyal. Byzantines were able to seize Achaea even in their most weakened state, and many of the Latins were apparently willing to defect to a new overlord even before. Some may be conquered, some defect, and some might even be overthrown as SRBO said.
 
The Ottomans control one of the best anatolian lands for farming (Bithinya) if they do not control both sides of the bosphorus or have a good navy they probaly will fall prey for any strong power who control Constantinople be Bulgar or Sebian empire.
I will love to see a second Bulgarian empire wank timeline.
