The Ilkhanate was cool and is underused in AH.
But Orthodoxy is certainly going to be accepted, even mainstream, within the "Greek Khanate."

I'd also accept Purple Horde or Khanate of Rum as acceptable designations ;)
Pressure from the remaining aristocracy and peasantry will most likely force the conversion and assimilation of the Mongols in a couple generations.

Coupled with Serb knights on horseback, now that's truly epic. :D
Its also a recipe for the foundation of a very powerful state once the fighting settles down and the areas get increasingly integrated.

The Purple Khanate will be a force to be reckoned with. And will probably be a cool linguistic mix too.
 
IF they managed to conquer Constantinople, is there any chance that the Horde will adopt the Orthodox faith?
That will depend on the shape of the successor Khanate. If Constantinople (or the burning ruins left of it) is just an outer fringe of a Khanate that dominates the Middle East, probably not. But if the successor khanate which rules Constantinople is based there and has lots of territory in the Balkans, probably. Especially if the Orthodox betray their Latin rulers in favor of the Mongols.
