Wouldn't Nova Scotia's be best a quartering of the French and Scottish Arms than just the French?

After working on George McGovern's two unsuccessful Presidential campaigns against President Rockefeller in Texas, Bill and Hillary moved to the Tri-City Region (both Bill and Hillary studied at Yale University in New England, so the area was familiar to them.) Hillary would lose the 1981 New York mayoral election, but the pair would then move to Westchester, where she served as mayor before being elected to the Senate.

Last 50 years or so.

Maine's flag specifically includes nothing that could lend any favour to either language, so no blue or red.

Well, most of the other new ones are "bad" enough to be realistic. This was just the one that stuck out to me! The key is having realistic evolution based on the differences to OTL.
What do you want the flag to represent? The OTL is based on the older Arms of the Colony so if all you want is something to show a little bit of francais then fleurdelys on each arm of the OTL NS saltire will work perfectly.

Edit:
The flags are mostly going to be ensigns or banners of arms. Some of those arms will be recent adoptions/reworkings.
My changes would be:
Long Island - either stretch the union flag out like with British Columbia or make the orange a cross.
New Brunswick - otl version or the lion half above blue-white stripes.
