No Congress Poland

Instead of the Kingdom of Poland being established the 1795 borders concerning Poland are restored. Wallachia and Moldavia go to Russia.

"1795 borders" you mean with Lithuania or not? As in, are you referring to the borders of the Crown of Poland being restored, or the Commonwealth itself?

How this happens is important, one possible scenario is Prussia deciding to side with Napoleon (not as crazy as it sounds, if you can get another Francophile a la Frederick the Great.... shame he's a decade in the ground at this point) and trading her (very limited compared to post-Vienna) Rhenish territories for Pomerania, Saxony etc.) Presumably this also means dismantling Austria into a bunch of client states.

Having Prussia onside is important because you need them strong enough to tell Russia off when they try to push west, and to rebuff British attempts to reshuffle them westwards to watch the Rhine against France.

What will hapen with the part of Saxony that Prussia gets after Congres of Vienna with the borders of 1795 they don't neef to be compensated?

All of the Electorate of Saxony would go to Prussia. Just as the lands of the Elector of Bavaria before 1777 and Salzburg would go to Austria. The rest of the lands of the Elector of Bavaria, the Prussian enclaves in Western Germany and the Austrian Netherlands would go to the New Kingdom of the Netherlands.

I'm guessing the Wettins would give up Saxony to Prussia in exchange for a hereditary crown in Poland in this scenario? Or would they get the Rhineland that Prussia's given up?

This Poland is in trouble: given that Prussia, Austria, and Russia (Allied in the Holy Alliance and the militarily relevent powers in North Centeral and Eastern Europe) all have bad experiences with the Grand Duchy and strong reasons to crush any bastion of Polish nationalism. Since the new state is too weak to defend itself, the three hostile powers don't have pressure on other fronts to keep them at bay, and no other nation can provide protection for Warsaw they'll last no longer than the first major provocation

To erase the stigma of Napoleon and the French Revolution the three eastern monarchs decide to restore things to the status of how things were before the Revolution with modifications that would benefit them.

So in Eastern Europe the borders after the 3rd Partition of Poland. Finland would stay with Russia and Sweden would be compensated. Napoleon’s invasion ended the Russian occupation of the Turk’s Trans-Danubian lands and an ultimatum was sent to the Ottomans that for peace to remain the lands will be given to Russia.
