Julian was put under more of an "Arian" guardianship and Constantius II tried to indoctrinate him to Ariainism. He wont have the chance to be introuduced to Neoplatism (Paganism). He is now an young adult (just getting out of teens), and his faith is pretty much set from now on.
Also as a side note, Constantius II has actually helped spread Nicean Christianity a bit by his persecutions, a large community in Mesopotamia formed of fleeing Niceans. In addition, not many have coverted to Arianism but just say they have to avoid the Emperor's wrath
