Actually, Happy Gilmore wasn't made ITTL:(Note as my OTL self: I assume the two Sandler movies in question still got made ITTL, but that The Waterboy was butterflied by him being in Saving Private Ryan.)
As for Adam Sandler, Billy Madison was a success, but instead of going on to do Happy Gilmore, he was offered a chance to audition for the role of Milla Jovavich's love interest in Barcode. His performance in the movie (as a semi-comic relief but also somewhat tragic character) was praised and he's currently being considered for some more dramatic roles in future films.
