A Muslim Uyghur dynasty would be difficult to achieve for two reasons... The biggest reason is geography - the only way into the middle Chinese plains, location of the historic capitals and the heartland of Han Chinese civilization is through the Hexi corridor of Gansu, which is a very small bottleneck, harsh, mountainous terrain, and heavily garrisoned by the time the Uyghurs come to prominence. Second, the minority dynasties in Chinese history all come from nomadic ethnic groups like the Manchus, Mongols, and Khitans, who have more reason to take up such a conquest due to the nature of tgeir culture and lack of resources. The Kazakhs and Kyrgyz may fit the bill, but they'r even further away and have the same problem of geography. Maybe an ethnic group in Mongolia or Dongbei could convert to Islam and do the deeds.
