There's no Catalan on that list, BTW.

Occitan is the same language as catalan in the reconquista, the same can be said for Napulitano and Romanesco/Central Italian, Romanesco split with Napulitano because of Tuscan Influence,Tuscan is also a close sister of Napulitano just like Sicilian.

I am going with French, unless of course the Justinian plague never happens and Justinian reunifies the Empire then its Latin, Charlemagne is the only plausible NON-Byzantine revival.
The question what will be the "standard modern spoken latin" look alike what will it be based is it either on Tuscan, Parisian, Occitan etc... since the "Standard Modern Chinese" is Mandarin..

We all talk on Rome avoiding the fall and moving into Chinese-history like periods of maybe being divided but re-uniting and still being solidly 'Roman' in culture and thought amongst the people. And that led me to propose this idea.

If it re-united, and Latin was the WRITTEN understood language amongst most people...yet the vulgar tongues are STILL developing...we may get a Chinese-like situation where different SPOKEN languages are across this new Rome but the WRITTEN language is uniform amongst all the people(s). Just like the Chinese writing system being the same across all of China despite many languages/dialects spread across their area.

Conversely this may halt the development of the totally separate Romance languages and bring them back into greater similarity with each other, if you get that... maybe like Arabic. So that you might have some rather far-off dialects of this 'Latin', but nonetheless just that-dialects, not unique languages of and to themselves.

Some sort of Romance language would rise to prominence in West Francia - even by the time of Charlemagne, AFAIK the Frankish language was basically dead in the west. Whether or not it is the Parisian dialect, it will still be something that can be called "French" ITTL. Latin may remain the official language, but that does not mean that anyone outside of the ruling class / bureaucracy will speak it. German will remain dominant in Germany, Italian in Italy, and a mix in Lotharingia.
