How would the rest of Europe interact with a Christian analogue to the Ottoman Empire?

EO are considered schismatics not heretics. The EO bishops are considered by Rome to be within the apostolic succession, and their sacraments are considered valid (if perhaps illicit).

Nestorianism is considered unambiguously heretical by both Catholics and EO, and has been ever since the Council of Chalcedon in 451.
There is some grey. Nestorianism was certainly condemned at Ephesus, 431. Even so, the members of the Nestorian Churches are welcomed to Catholic Eucharist, at least in the US:

Members of the Orthodox Churches, the Assyrian Church of the East, and the Polish National Catholic Church are urged to respect the discipline of their own Churches. According to Roman Catholic discipline, the Code of Canon Law does not object to the reception of Communion by Christians of these Churches (canon 844 §3).
 
if the crusaders managed to keep up a kingdom for a while, a stable nation with supply line can hold it
yeah i guess but in 1500s? hard heck the population of cairo joined the mameluks to figth the ottomans if they where now infedels that would be worse and if it looses support from the copts there is no way of conquering egypt

mamaluks in early 1500 are not a problem, In OTL they were stronger then OE but lost because refused to use fire guns and cannons so i don't see any difference here, Egypt is gonna be conquered BUT the problem is how you gonna make the population loyal, maybe lower taxes for a while and than lower taxes only for who converts
