The problem is the Derg, IIRC, had the support of many officers in the army.
Their monopoly on arms, coupled with Selassie's bungling of the economy makes reversing OTLs course of action very difficult
 
Maybe his son, could become prime minister if not emperor. The old system was not perfect, but didn’t dilbertly starve it’s own as mengitsu did.

No Communist takeover is a good thing. But it would be continuation of aristocratic rule instead, wíth Haile Sleassie even more eager to please his remaining backers in the aristocracy in order to hold on to power. More of the same, and under the Surface Ethiopia would still be kettle ready to explode.
 
The Orthodox Church could do what it did in Greece develop a large network of free resturants and medical clinics to aide the poor

or you know, Haile could just abolish the autocracy of the government and turn Ethiopia into a constitutional monarchy. I mean, it would make sense for him to do so in order to prevent anymore communist uprisings.

He didn't really had that in him. He was a reformer, yes, but it was more about turning Ethiopia from a feudal state to a more modern centralized autocracy (and he wasn't that usccesful with that either).

He wasn’t capable of doing that by the time the 1974 Revolution came around, considering the Derg actually managed to get him to cede a significant amount of power to the lower chamber of parliament.

Haile Selassie wouldn’t be capable of doing that but if Amha Selassie becomes Emperor when the Derg offers it to him, you could see Amha actually transform Ethiopia into a constitutional democratic monarchy. This allows him to become popular with the peasantry and intelligentsia who will revolt if the Derg attempts to remove him.
 
If you don't want the Derg to come along as it did, have Haile Selassie focus on modernization instead of centralization in the aftermath of the Italian occupation.
 
A good thing would be to have the new PM, Lij Endalkatchew Makonnen, implement reforms faster and gain the favor of the peasantry (maybe even a sizable number of the intelligentsia) as Amha Selassie becomes Emperor. IOTL, Endalkatchew's government had already instituted reforms to handle inflation that occurred due to the 1973 Oil Crisis but the growing influence of far-left radicals made sure that Endalkatchew didn't last long and that someone like Mengistu came to power. If concrete constitutional reforms are implemented under the new Emperor, then the radicals won't have as much influence but that doesn't mean that Ethiopia will remain stable - apparently, the Ethiopian People's Revolutionary Party was planning an insurgency in southern Ethiopia.
 
there was a small middle class, who wanted a Jordanian style system. some democracy, but a substantial royal veto.
 
A few princes had the idea of conducting an irrigation program to buy off the remainder of the separatists. that would have brought time.
