A movie would probably focus on only one character, like Jon or Daenerys or something. That's why it wouldn't really fit like a movie.
 
The way "Game of Thrones" (book 1 in a X number series) there is no real end for any single character (unless you consider some one like Ned Stark who gets beheaded).
The "Game of Thrones - Book 1" is the foundation for 5 written (and perhaps 2 more planned) books.
Each book is really a big chapter in a longer story.
If as sugguested you focused on just Jon Snow - his a a story spanning many books that would exceed any single movie.

As much as I like Jon Snow as a character, a movie series all about him would be boring. What does he even do during the first book/movie? Train to be in the Night's Watch... that's about it.

Daenerys is the only character which a movie could be built around in my opinion.

Just focusing on these 3 would not work at all. For example, during the first movie, when Tyrion gets captured by Catelyn, the audience wouldn't know WTF was going on. They'd be thinking "why the hell does this crazy Stark woman think Tyrion attempted to kill this Bran kid who I only saw briefly at the start of the movie". When Tyrion meets Tywin and has to fight in the battle against the Stark forces, the audience wouldn't know the cause of the war (Ned Stark finding out about Joffrey's parentage, leading to him saying Joffrey had no right to the throne, leading to his imprisonment and execution). It would just be a mess. A movie could not work.

They could do the Alexandria Quartet thing and tell the story in four single POV movies.
Events would be told from Tyrion POV (up until he kills is father) on I. From Danny POV (until she reigns over a city) in II. JOn would be the POV for the wall until he his Lord Commander in III and Cersei would provide the ending in what would be IV and provide some closure until the final film when GRRM decides to wrap things up...

Most of the audience would have read the books. The othe would have to do with dialogue and lots of raven messages being read out loud.
