Last I checked, there was a German(?) attempt to make a canal through Nicaragua, but mosquitos killed the plan. Could this have actually succeeded? And if so, how?

If the French had been less willing to sell off their Panama project, the US might have tried for Nicaragua instead. At that point, you mostly just need the identification of mosquitos as a disease vector that helped the Panama project IOTL, and implement similar measures in Nicaragua.
If you are objective, isn't Nicaragua the easier place to work?
