So what do you think the response of the Coptic Church will be? Copts might still be up to 30% of Egypts population, and historically they were cracked down on during the crusades so I'm sure plenty are escaping to Christian areas.

Well they were to live peacefully under the Ayyubids, and since Jerusalem now owns Aqaba and West of Gaza, I can see more Coptics or even a new Christian Church.... We shall see next chapter

Werent the Coptics mainly Orthodox Eastern Christian? I'm not to good with the religious groups like the Coptics, Cathars, etc.

They certainly weren't Orthodox Christians. They had their lines of Popes.
