To be precise - there were cases in the 19th century of one Vice-President being replaced by another. Imagine on say December 1 between Election Day and the Electoral College vote the President dies.
Jackson in 1832, Lincoln in 1864 Grant in 1872 - what would the Electors have done?
1832 - President Calhoun VP elect Van Buren
1864 - Hamlin, Johnson
1872 - Colfax, Wilson
 
The Electors by this point will already have the votes in.
All the incumbent Vice Presidents will be acting Presidents and all VicePresident Elects will be sworn in.
The duty of picking a new Vice President wasn’t arranged until after Kennedy’s assassination in 1963 and wasn’t used until Spiro Agnew’s resignation in 1973.

The interesting one would be that after the 1872:
4/3/1869-1/12/1872: Ulysses Grant
1/12/1872-4/3/1873: Schuyler Colfax
4/3/1872-22/11/1875: Henry Wilson
22/11/1875-4/3/1877: Thomas White Ferry (who was President pro tempore of the United States Senate since March 9, 1875)
