What happens if Guy Carleton became Governor of Quebec instead of Governor of North Carolina?

What, you mean the Dominion of Northern America? I don't know that that old term Canada would pop up.

Hmm, given Carleton's ability, I would expect Quebec and the Northern States would stay British.

Without a doubt, Carleton could keep the northern colonies in line. Whether the South still stays loyal or shoots for independence depends on which colony is the dominant one. My money would be on either Virginia or South Carolina.

What I'm wondering is what would become of the territory out west; how much of it would stay Mexican, or would one of the two Americas (British North, Independent South) try to cut in on that slice of the pie.

Even given Carleton's ability, I doubt he could satisfy both Quebec and New England. They've hugely divergent interests, religions, and just about everything. If Carleton accommodates the Roman Catholic Church, he'll anger Massachusetts; if Carleton beats them down, he'll anger Quebec. So, I think one or the other of them (or just maybe both, if he tries to walk a middle course, but I think he's more competent than that) will be rebelling.
