This is well before any of the tribes Europeans contacted have formed, though these tribes are their ancestors. They would be part of the South Appalachian Mississippian culture or at least have close ties to them via trade.
The horses I assume will be quite small, probably Welsh Mountain Pony style. There won't be any of the great shire horses that European knights in full plate armour use.
