This is well before any of the tribes Europeans contacted have formed, though these tribes are their ancestors. They would be part of the South Appalachian Mississippian culture or at least have close ties to them via trade.

By the Late Woodland Period, the native groups in the Southeast were more or less in the same area as they were in the 1500s. Of course, they were organized into the complex chiefdom societies that marked the Mississippian Period.
 
The horses I assume will be quite small, probably Welsh Mountain Pony style. There won't be any of the great shire horses that European knights in full plate armour use.
