You could have Bolivia go communist if Che Guevara succeded. Though Plumber has a point, the United States would grab a suitably brainwashed puppet and get him in power in the nations.
 
Che Guevara won't succeed in Bolivia, as he lacked any type of local support.
The issue is keeping the Latin American armies loyal to their own governments instead of the American one. But even if that's achieved, they would still fight communist guerrillas and succeed, as they simple have a lot more resources at their disposal. Should that fail, or a democratic communist party ends up winning elections and the military remains loyal to such government, then the USA can invade the country, as they did with Granada and tried with Cuba.
I'd say only the larger South American countries have a chance of remaining red - Chile is the best case if the Armed Forces remain loyal to the government. Regarding Mexico, whatever the POD, the USA won't let a Soviet ally exist on its southern border.
 
Venezuela is edging on communist and several of the countries in the area where commie before the USA intervened and toppled regimes. Perhaps if the USSR had given more active support ?
 
That could only happen if these two conditions were met.

A. The US is not able to intervene in any way. This would basically require the United States to experience a massive economic collapse on the level of the Great Depression, or have a rather massive volcano erupt.

B. The military stays loyal to the government, and this may only happen if condition A is met.

Do those two, and you could probably succeed.

Ever since I read up about him, I felt that this man, had he gotten the chance to live a lot longer, could had been able to influence the growth of Communism in Latin America, particularly in the Andean countries i.e. Ecuador, Peru and Bolivia where there is an incredible degree of income, wealth and social inequality between the European criollos and everyone else including the Amerindians and mestizos. Communism and socialism in general was very popular in Latin America and all you need is to have the USA not to butt in so much in their neighbor's affairs and a little bit of luck to achieve this.

Preferably before the Cold War started.

In my parent's homeland, the Ecuadorian Communist Party (PCE) managed to win fifteen out of the total eight-five seats in the National Congress in the 1944 legislative elections and secured an administrative post in the President's Cabinet as Minister of Education. The party was quickly banned by the Ecuadorian government due to fears from many that they were supported by the USSR and pressure from the USA. It was fairly popular from its founding in 1928 and its support only withered due to the banning.

The PCE's main support was and is still in trade unions though it could had easily widened its support (there were and are several competing left-wing political parties which the PCE could had put under its wing) and try to maintain party cohesion during the major China-Soviet splits.
