Instead of rejecting Israeli Prime Minister Ehud Barak's peace offer at the 2000 Camp David summit and launching the Second Intifada, PLO Chairman Yasser Arafat accepts Barak's suggestions, or alternatively requests some modifications and successfully negotiates a peace agreement. What happens next?

I think that there would be massive violence and instability across the Palestinian territories and in Palestinian refugee camps throughout the Arab world when it is learned that Palestinian refugees will not be allowed into Israel (Barak suggested compensation and resettlement for refugees, with a symbolic number allowed into Israel). Hamas and other radical Palestinian factions would consider this a betrayal and begin launching attacks on Israel, hoping to undermine the agreement. I have doubts about the Palestinians accepting the agreement in a public referendum, though given Arafat's history, he would probably rig it.

IIRC the offer was that they would get West Bank and Gaza Strip without East Jerusalem.
IMO if Arafat agrees with that he would be capable to convince majority of Palestinians that that is the only option. He simply was too influential and if HE says that he can't have a better deal, Palestinians will listen...
