Virginia: castration for men; facial mutilation or life imprisonment for women
Goergia: the same
Maryland: fine
New Jersey and Pennsylvania: life imprisonment
New York: ?

Also, consider that castration is very dangerous and will result in many deaths (though, I don't think authorities will care much, given the conditions in prisons back then.

Do you know any books/novels about or written by persons who were victims of the sodomy laws? Sure, there is Oscar Wilde, but I'm speaking of the US.
