You forgot the option "there is no US-Mexico border," which could easily happen if the Louisiana Purchase is butterflied.

Other than that I voted "could be done."
 
A lot depends on what unfolds. I suspect that it would be unlikely, but not impossible.

Louisiana stays independent from the United States, and instead, it becomes a monarchy after it gains independence from France. Afterwords, it wins a war with Mexico and gets all of Mexico up to the OTL Mexican-American Border. Meanwhile, a coup happens in the United States and the United States becomes a monarchy. Later, a Louisianan king dies without heirs, and the title passes onto the American monarch, who then proceeds to unify the two countries together.

How on earth is the US just getting a random coup? Or Louisiana being able to take on Mexico?
 
It was going to happen at some point or another; you can delay it by having Texas included in the Adam-Onis Treaty (up to the Brazos), to the cost of Oregon, but even then there will be extensive pressure to push the boundary to the Rio Grande, not to mention the acquisition of California. Oddly though, this means the United States will not have standing in Oregon unless Mexico itself surrenders its rights to the territory (inherited from Spain), which would obviously be a requirement in the case of an American victory.

Suffice to say, I see war happening one way or another, unless the Mexicans are very lucky.
