Well if you're certain there's no way California and Texas could survive then I'll trust your expertise :) My final question then, is can a rump state of Texas still exist? Perhaps the initial territory upon independence?

Yes. If the government is reasonable or focused on other things.

It makes a nice buffer state, gets rid of a hostile population (the effects would become apparent once Mexico finds out its saving money not sending in troops to crush Mayan revolts every 2 years or so) and increases Mexican prestige by making it look like the big kid on the block.

Cali though is gone. Too few people, too much land and resources up for grap and too little opponents to contest it.

Thanks for the input,this is why I checked here before writing my TL! I granted Mexico a colour since it's a strong, influential state now :p
 
6) Colombia didn't lose anything to Peru, rather, in OTL they gained that portion of Quito later on. In this timeline they never fought and so they never gained that land.
Why didn't they fight? There were conflicting interests going back to the old colonial era and the Colombians wanted to plunder Peru so they can fund their wars with the Spanish (which conveniently for them, Peru was the last place to be liberated). Second, if Quito is gained later that means the war with Spain drags on later, hurting both of them and making Colombia very likely to bankrupt itself, which will cause civil war against the government. If for some reason Colombia and Spain make peace, that means Peru will stay a colony of Spain.

Ignoring that, Peru and Colombia are also two relatively large and equal powers. They are going to come to blows sooner or later, with the winner aiming to take Quito and/or hold it.

How should I deal with this issue then? Colombia gains all of Quito?

Edit: on a closer inspection, it's actually Peru that has less land than OTL, here's an imposed image:
