So the challenge here is with a POD of whatever you want, create a scenario where the Soviet Union occupies most of Western Europe by the end of the Second World War. How would such a scenario affect the Cold War, if they're even is one?

A scenario where Operation Unthinkable is actually attempted and goes catastrophically wrong comes to mind.

Unthinkable doesn't work because the Anglo-Americans will ultimately defeat the Soviets. You'd probably need for Barbarossa to collapse during the Kiev option, keeping Eastern Ukraine under Soviet control and preventing the Soviet disaster of Typhoon during its early stages.

Well. Getting Poland and the Reich wouldn't be too hard.. Finland and the Baltics....

The rest with if declaring war on say the Balkan nations, France, Norway, Sweden.. Eh that would be tougher

There was lots of communist sympathisers and people who would support Soviet governments in Europe, problem is getting them in power.

Last problem is getting said Soviet Europe to last more than 30 years with out fighting or disintegrating into a squabbling mess

That felt like 1984, except instead of Eurasia and Oceania it's the Soviet Union (and the Warsaw Pact) and the United States plus the UK (maybe Iceland, Denmark, Spain, Portugal, and Andorra as well).

The PoD is that Greece wins the Greco-Turkish war, keeping all of Thrace and Smyrna. History generally goes the same until the Spanish Civil War which ends with a Republican victory. World War II kicks off in the same manner, except the Soviets conquer all of Finland in the Winter War and the Germans take Spain after France. This severely pisses of Stalin and causes him to prepare more effectively for a future war against Germany. Work on the Molotov Line accelerated as fast as possible. When the Balkan campaign kicks off Turkey joins the Axis and invades Greece to regain lost territory. After Yugoslavia and Greece fall Hitler decides to continue the war against the British in the Middle East and Mediterranean instead of launching Operation Barbarossa. The decisive Soviet victory in the Winter War makes Hitler realize that defeating the Soviets would be harder than expected, and Turkey in the Axis means taking the oil in the Middle East would be easier than taking it from the Soviets. Axis troops pour into through Turkey and Vichy Syria into the British Middle East, securing Golden Square's control of Iraq and Kuwait, then overthrowing the Hashemites in Jordan and dealing unspeakable horrors to the Jews in Mandatory Palestine. Reza Shah also brings Iran into the Axis. Germany takes the Suez Canal. Shortly after Japan starts its strike south, but Hitler decides not to declare war on the USA, so America takes a Japan-first strategy while fighting alongside the UK in Asia and providing lend-lease to the UK. The loss of the Suez Canal means Britain does even worse in Asia. With Britain's empire all but lost by the end of 1942, Hitler finally decides he has enough resources to take on the Soviet Union. The Axis invades in 1943 after the spring mud has vanished. Axis forces take horrendous losses trying to break through a fully completed Molotov Line defended by a Red Army that has completely recovered from the purges and finished training its newly expanded forces. The Soviets counter-attack and are in Berlin by the summer of 1944. Germany doesn't surrender after this but Axis morale quickly collapses. The Soviets take West Germany then pour into Western Europe. Communist elements of the French Resistance overthrow the Vichy regime and join the Soviets, and the pro-Soviet Communist elements of the Spanish resistance take power in Spain. The Soviets also take Norway from the Germans and invade Sweden while doing so. Romania, Bulgaria, and Hungary are taken by the Soviets as OTL, and the Tito's partisans seize power in Yugoslavia. The Soviets fully back the Greek communists and bring them to power. Turkey and Iran are invaded by the Soviets. Meanwhile America declares war on Germany, but the Soviets end up taking Europe too quickly for the Allies to launch a naval invasion.

D-Day fails so the soviets push far into France. The allies get Italy though.
