AHC: Saxony unites Germany:

The challenge, should you choose to accept it, is to have the Kingdom of Saxony be the unifying force of a unified German state that must include both Catholic and Protestant German states. Whether this is a Klein- Mittel- or Grossdeutschland is up to you.
 
What's mittel-Germany? Anyway best thing I can come up with is a different '48. Austria is always going to be the "Catholic" candidate and Prussia the "protestant" candidate post Napoleon.

A Germany encompassing Austria, but not the entirety of the Habsburg domains.

I remember there was a very good TL about Saxony unifying the vast majority of Germany (including Bohemia, but not Austria and Bavaria) in the 16th century, with a very different TYW sequence. I assume it would fulfill the OP's requirements.

I think it was Dr Waterhouse's work.

Basically for this to happen your best bet is preventing the rise of Brandenburg; easily done in a medieval POD - or early reformation; Saxony was the first supporter of Luther.
 
I believe Look To The West has a Saxony which is heavily hinted to go on to unite Germany, though it has't actually been described yet.

Your best bet IMO would be to somehow make the Wettins more competent, and have Prussia lose a couple of wars. Up to 1700 Saxony was wealthier and more populous than Prussia, given a string of good rulers they could conceivably take Prussia's position OTL as the main rival of Austria in Germany.

Yep. According to the last map, TTL Wettin Empire had all but unified the HRE: it only lacked Bavaria, Austria, Lorraine, and the Spanish Netherlands (the Dutch had already gone their way). Quite doable, with decent butterflies.
