Well the French Canadian peoples had not yet developed the identity that made them Canadien versus just being French colonists. It had been only ten years previous that they had lived happily under French rule.
Actually there is a lot of writing from the French colonial period noting how Canadien culture was already diverging from that of the mother country. Among other things, Canada became linguistically unified much earlier than France did - before the end of the 17th century.
But I mention this more specifically to avoid confusion in the context of this war. The French supported the Americans pretty enthusiastically. The Canadiens, not nearly as much. Your post above did not make that very clear.
