AHC/PC: Spanish-Dutch war during the War of Austrian Succession?

How possible can it be for the Dutch and the Spanish to directly come to blows on the 1740's?

Furthermore, what are the military capacities of both countries at the time? Could they have the ability to project their power to attack and/or seize, however temporarily, their respective colonies (Peru, Mexico, the Caribbean, Suriname, Cape Colony, etc)?

It seems difficult. At that point it seems like their interests don't coincide.

I guess one possibility would be for Spain to decide it wants to regain the Austrian Netherlands, but that would probably lead to war with France, so it would seem doubtful.

Both countries were in decline at the time, though Spain had the Bourbons shaking things up and strengthening it, though too little to prevent its decline entirely. So, I'm gonna say Spain would win.

The Netherlands would not be able to conquer any of the big Spanish colonies. They're just too big and since the Bourbon reforms, also guarded by actual militias. I don't think Spain would have the reach to conquer the Cape Colony either. It would probably just stick to naval battles and battles around/for Suriname, as well as attacks on the Carribean colonies of each other.
